How do you keep cakes to be hot during the summer months? I have seen many designers of cake on many cake shows to place their cakes in a refrigerator. I've heard of placing them in a box before refrigeration to prevent sweating cake, but it does not appear that these designers do it.
Are they in their refrigerators at low temperatures? Setting the cake in a cold room does not because that the time where that they hit the 93-degree heat that no car air conditioner can follow they are beginning to warm up and then drag.
