Bold, daring & new: Entrement cake

Over the years, I have a few cakes.  And only if I think that I've seen everything, I know that creative minds are always working to expand new frontiers.   This is, why I love introducing you, new ideas and trends.  And oh my, today is a trendy day!  When I saw the today's cake, I was curious, confused and surprised at once!  Is it genuine?  What it consists of… concrete?  Intrigued, I had to learn more!

Marcella Robin, the talented artist behind this cake, can confirm that he actually real and completely edible....  Marcella is the owner, Baker, designer and Chief mastermind at MRobin cake in Portland.  Their Entremet cake consist of sponge cake, layered with a variety of creams and puddings, mousses.  It is known then a thin outer layer of sponge cake, when wrapped in Jaconde.  In contrast to a traditional cake, the design is not created by icing or fondant but baked in the outer sponge for an extremely smooth surface.  Together with Marcella of graphic design, the result are bold and gewagte!

Marcella was for the first time to decorative sponges in pastry school.  After graduating, she decided, experiment with Jaconde and really, the possibilities of this medium.  After years of cake, make and design is Entremet wedding day their focus now.

A few thoughts from Marcella:

"I'm in love with pastry."  The graphic quality of the Jaconde, in connection with the traditional form of the stacked cake is delightful to me.  They are androgynous, traditional, modern, and have an air of inevitability about it, which I find perfectly mysterious.  As a designer and Baker, I find the interplay between technology and taste so interesting - the taste profiles and textures are unlimited. "

A look at the inside reveals Strawberry mousse, vanilla sponge, almond Dacquoise and Strawberry Jam layers and then a poppy seed and Almond Cake wrapped sponge.  It looks just decadent!  And I the bold lines in the yellow and strong on this next one really love...
